Caprese and tricolore salads
My favourite salads and the simplest to prepare. The most important thing is to have good quality tomatoes.
Caprese salad
Ingredients
1 or 2 beefsteak tomatoes
1 mozzarella ball
1 sprig of fresh basil
Extra virgin olive oil
Method
Preparation
Cut the tomatoes length wise into slices and spread them on a dinner plate.
Place the mozzarella ball in the centre of the plate.
Drizzle a little olive oil over the mozzarella ball.
Garnish with the sprig of fresh basil.
Serving
Nothing else to do, just serve.
Storage
Don’t store for any length of time. Best prepared and served fresh.
Alternate
The mozzarella ball can be replaced with a burrata.
Tricolore salad
Ingredients
1 or 2 beefsteak tomatoes
1 mozzarella ball
1 fresh basil
Extra virgin olive oil
Method
Preparation
Cut the tomatoes length wise into slices and spread them on a dinner plate.
Cut the mozzarella ball length wise into slices.
Place each mozzarella slice on top of a tomato slice.
Put a basil leaf on top of the mozzarella.
Drizzle a little olive oil over the top of the towers.
Serving
Nothing else to do, just serve.
Storage
Don’t store for any length of time. Best prepared and served fresh.
